Cucumber and Pineapple Salad
  • 1½ cups cucumber, deseeded. Sliced cucumber with skin intact.
  • 1 cut of pineapple, about 1.5cm x 9cm, deskinned and cut into cubes
  • 1 cup onion, sliced
  • 3 red chillies, seed removed and sliced
  • 5 tablespoon lime juice
  • 1 tablespoon sugar
  • ¼ teaspoon salt (if needed)
  1. Mix cucumber, pineapple, red chillies and onion in a salad bowl.
  2. Add lime juice and sugar, mixed well.
  3. Cover the bowl with plastic and leave overnight in the fridge before serving.
  4. Season salad with salt according to one’s taste, transfer into a serving plate.
