Mango with Glutinous Rice

Mango with Glutinous Rice
  • 1 cup glutinous rice
  • 5 pieces pandan leaves
  • 1½ cup coconut milk
  • 5 tablespoon granulated sugar
  • ½ teaspoon salt
  • 5 tablespoon corn flour*
  • 2 tablespoon rice flour*
  • 1 mango

* Mix together

  • Add glutinous rice and pandan leaves into a bowl. Add water half of the glutinous rice.
  • Steam until cooked using medium heat. Stir once a while. Set aside.
  • In a different pot, heat coconut milk with medium heat.
  • Stir until coconut milk turns oily.
  • Add 4 tablespoon sugar. Stir until sugar dissolve.
  • Set aside ¾ cup coconut milk and add the remaining sugar and ¼ teaspoon salt. Stir until ingredients mixed well.
  • Add little by little coconut milk into the glutinous rice when the its still hot. Mixed well.
  • Heat the remaining coconut milk using medium heat.
  • Add flour to thicken the coconut milk.
  • Season with ¼ teaspoon salt. Stir.
  • Eat glutinous rice with coconut milk and sliced mango.
