Thai Fried Glass Noodle

Thai Fried Glass Noodle
  • 2 cups glass noodle – soak for 20 minutes
  • 2 pieces chicken breast – cut into 4 parts
  • 1 carrot – cut lengthways
  • 2 stalks pak choy – cut small
  • 1 tablespoon chilli sauce
  • ½ tablespoon oyster sauce
  • 1 tablespoon sweet soy sauce
  • 1 stalk lemongrass – smashed
  • 2 pieces kaffir lime leaves – slice thinly
  • ½ cup water
  • 2 tablespoon oil
  • 4 cloves garlic * 
  • 1 onion * 
  • ¼ inch ginger * 
  • ½ tablespoon blended chilli
  • Spring onion **
  • Coriander **
  • Cilantro
  • 3 red chillies – slice thinly
  • ½ cucumber – deskinned & slice thinly
  • 4 limes

* Slice thinly   ** Slice slightly

  1. Heat oil.
  2. Fry ingredients for stir frying until fragrant.
  3. Add chilli sauce, oyster sauce and sweet soy sauce. Mixed well.
  4. Add lemongrass and kaffir lime leaves.
  5. Add chicken and leave to cook for a while.
  6. Add carrot and pak choy. Cook for a few minutes.
  7. Add glass noddle and stir well.
  8. Add ½ cup of water. Cook until glass noodle softens.
  9. Serve into 4 separate serving plates.
  10. Garnish with spring onion, coriander, cilantro, sliced chillies and cucumber.
  11. Squeeze 1 lime.
  12. Ready to be served.
