Mango with Glutinous Rice

Mango with Glutinous Rice
  • 1 cup glutinous rice
  • 5 pieces pandan leaves
  • 1½ cup coconut milk
  • 5 tablespoon granulated sugar
  • ½ teaspoon salt
  • 5 tablespoon corn flour*
  • 2 tablespoon rice flour*
  • 1 mango

* Mix together

  1. Add glutinous rice and pandan leaves into a bowl. Add water half of the glutinous rice.
  2. Steam until cooked using medium heat. Stir once a while. Set aside.
  3. In a different pot, heat coconut milk with medium heat.
  4. Stir until coconut milk turns oily.
  5. Add 4 tablespoon sugar. Stir until sugar dissolve.
  6. Set aside ¾ cup coconut milk and add the remaining sugar and ¼ teaspoon salt. Stir until ingredients mixed well.
  7. Add little by little coconut milk into the glutinous rice when the its still hot. Mixed well.
  8. Heat the remaining coconut milk using medium heat.
  9. Add flour to thicken the coconut milk.
  10. Season with ¼ teaspoon salt. Stir.

Instructions for Serving

  • Eat glutinous rice with coconut milk and sliced mango.
