Thai Fried Glass Noodle

Ingredients
- 2 cups glass noodle – soak for 20 minutes
- 2 pieces chicken breast – cut into 4 parts
- 1 carrot – cut lengthways
- 2 stalks pak choy – cut small
- 1 tablespoon chilli sauce
- ½ tablespoon oyster sauce
- 1 tablespoon sweet soy sauce
- 1 stalk lemongrass – smashed
- 2 pieces kaffir lime leaves – slice thinly
- ½ cup water
Stir Fry Ingredients
- 2 tablespoon oil
- 4 cloves garlic *
- 1 onion *
- ¼ inch ginger *
- ½ tablespoon blended chilli
Garnish
- Spring onion **
- Coriander **
- Cilantro
- 3 red chillies – slice thinly
- ½ cucumber – deskinned & slice thinly
- 4 limes
* Slice thinly
** Slice slightly
Instructions
- Heat oil.
- Fry ingredients for stir frying until fragrant.
- Add chilli sauce, oyster sauce and sweet soy sauce. Mixed well.
- Add lemongrass and kaffir lime leaves.
- Add chicken and leave to cook for a while.
- Add carrot and pak choy. Cook for a few minutes.
- Add glass noddle and stir well.
- Add ½ cup of water. Cook until glass noodle softens.
- Serve into 4 separate serving plates.
- Garnish with spring onion, coriander, cilantro, sliced chillies and cucumber.
- Squeeze 1 lime.
- Ready to be served.
